Banana Muffins
Time for banana muffins! This recipe from @becs_fitbites
Makes the perfect size muffins to go with your afternoon cuppa, or for a grab-and-go breakfast.

Ingredients
2 cups oat flour (blended oats)
1/4 cup buckwheat flour (options: self-raising/more oats)
1 scoop vanilla vegan protein
4 bananas
1/4 cup coconut sugar
2 tbsp chia seeds (plus double plus 1 the amount of water to chia = 4-5 tbsp water)
Mix these together about 20 minutes before starting to make your “chia egg”
1/4 cup smooth nut butter
1/4 cup Oat Barista Blend
1 tsp baking soda + powder
2 tsp apple cider vinegar

Preheat oven to 190 degrees

Blend oats to make flour and place in a mixing bowl

Add all the dry
ingredients to the bowl (minus the coconut sugar)

Mash the bananas in a separate mixing bowl until smooth

Add the rest of the wet ingredients plus the coconut sugar

Once combined pour the dry into the wet and mix well

Place in a baking tray and bake for 60 mins
