Four Ingredient Chia Seed Chocolate Coffee Mousse
Rich mocha mousse without the guilt! This recipe was made by our friend Lindsey Baruch, a Los Angeles based food photographer, recipe developer, food stylist + social media manager. She loves to share her travels, new recipes  restaurants on her Instagram page @lindseyeatsla. Yes, please! Chia seeds, cocoa + brew blended for a rich mocha flavor. Chef's tip: build a DIY dessert bar using chia mousse as a base + add toppings of choice.
Ingredients

3⁄4 cup chia seeds
21⁄2 cup Mocha Cold Brew
1/4 cup cacao powder
1-2 tsp salt (or to taste)
Toppings:
Cacao nibs, raspberries, coconut cream or coconut whipped cream

Directions

Place your chia seeds, cold brew mocha + cacao powder in a bowl, then place in the fridge for an hour or two, it should get into a thick-like consistency from the chia seeds which is what you want

Take out of the fridge + blend until a thick mouse is formed

Place in a cup of your choice and top with raspberries, cacao nibs + coconut cream
